On The Go Breakfast Egg Muffins

Breakfast egg muffins are essentially small individual Frittas.

All you need to do is chop your filling ingredients, and then whisk the eggs and combine the two.

To make a 12 slot  muffin pan worth of egg muffins, you’ll need about 12 eggs in total.


  • 12 eggs
  • capsicum 
  • Diced bacon
  • Mushrooms chopped/can use button mushrooms
  • 1 Tablespoon of goat cheese
  • 1/2 cup spinach – chopped



Combine eggs and all ingredients into bowl and mix together

Evenly pour mixture into muffin tray filling about 3/4 of the way

Cook on 180degrees for 20-25mins.
