Quinoa Mexican Salad
- Cooked quinoa
- chopped tomatoes
- chopped capsicum
- black beans, drained and rinsed
- diced avocado
- grated cheddar cheese
- chopped coriander
- Add all ingredients into a bowl
- mix well
if it’s too dry, add more salsa.
If it’s not flavourful enough, some salt and pepper and a few shakes of cumin will up the ante – or, add some Mexican-style hot sauce!
You can also choose feta cheese over cheddar.
